Most recently, Executive Pastry Chef Dan Tabor has spent the past 13 years teaching baking and pastry at the New England Culinary Institute, and co-authored a book on modeling chocolate for cake decoration. Pastry Chef Rachel Thomas, a graduate of the Culinary Institute’s Pastry Arts Program, has been creating specialty cakes and pastries for several years at exclusive Vermont hotels and resorts. Chef Dan has transformed Stowe’s Trapp Family Lodge DeliBakery into a full-service bake shop offering exquisite wedding cakes, pastries and breads; all available to enjoy at the lodge or to take home.
